Each course was thoughtfully composed with the finest ingredients, and everything from the taste to the plating to the serving dishes was impressive. It was my first meal in Japan, and Sorahana made an excellent first impression, making me realize that service can be about providing a quiet confidence and space to savor, rather than continuously refilling water or having the waiter hovering around.
