I visited Kien-shi in Akasaka, a place I had been curious about. The interior has a calm atmosphere without being overly stiff, allowing even first-time visitors to relax and enjoy their meal. The dishes are composed with a focus on seasonal ingredients, and you can truly feel how each plate respectfully brings out the natural flavors of the components. The structure (fish/seafood) was fresh, and both the grilled and simmered dishes featured gentle seasoning, offering a true sense of Japanese culinary delicacy. I got the impression that every dish relies on solid technique and the inherent quality of the ingredients rather than mere flashiness...
