August 2026The soba here features a high-quality, sweet 'gang-gwa' style made using only the endosperm (the core) of the buckwheat grain. Since they also grind in the outer skin (pericarp), making it darker with a stronger aroma and firmer texture (koshi), those who prefer standard buckwheat should be cautious. (I believe soba lovers will naturally notice the difference, but since it seems there aren't many who are aware of it)...
