Reservations are essential because it is an extremely popular restaurant. The taste is excellent. However, since both the sushi and the a la carte dishes are small and elegant, I recommend focusing on the sushi when eating a course meal. While the service is good, I personally feel a sense of pressure from certain chefs, so I wouldn't want to eat at the counter.

Visited Nishishin's Fukuzushi on a weekday night. The sign is humble, but once you step inside, it is the real deal. First, the live white shrimp: its structure is unique, and the body is a transparent, delicate flesh with incredible sweetness. Next came the mantis shrimp; despite its mysterious appearance, the taste is sweet and exquisite—I highly recommend first-timers muster the courage to try it. The sea snail has a crunchy texture, and the bitterness of its liver pairs perfectly with alcohol. The otter's specialty comes with liver included, and eating it with the liver creates a rich, spreading flavor that is superb. The chewiness...
