September 2026I've eaten many Kumamoto-style ramen, but the taste and atmosphere were so authentic that it made me wonder if I had truly arrived in Kumamoto. Rather than typical chashu, it felt more like lahte (braised pork belly), giving a sense of a mix between Kumamoto and Okinawa, but the pairing was exquisite and delicious. The main shop is reportedly in Saitama, so they might not have direct roots in Kumamoto, but this bowl truly reflected the owner's dedication to Kyushu ramen.
