This is not a hand-kneaded udon shop, but a "Hand Fir" udon shop. Due to the "Hand Fir" and aging process, it seems there is no fermentation process. The menu features single udon dishes and sets with acorn jelly. The thin udon has a flexible texture (koshi) and goes down the throat smoothly. Even beginners were surprised by the taste of the udon.
