August 2026I came to try Mizutaki, which is said to be a famous dish in Fukuoka. If I were to paraphrase it, I'd call it a clear chicken broth hotpot. The food is served in a Kaiseki style, meaning dishes come out one by one at the perfect timing, and overall, the food is very clean, neat, and light. Using the main chicken broth, various meat dishes, meatballs, vegetable porridge, etc., are served. Since the savory dishes flow around the central chicken broth, it almost reminds me of a clear Samgyetang (ginseng chicken soup)...
