September 2026I visited "BURRATA" in Sonoda, Okinawa City. It is a pizzeria located at the entrance of Gemini Baekchae Street, about a 3-minute walk from the Gemini Bus Stop. It was selected as one of the top 100 pizza restaurants in the 'Eat Log' in both 2023 and 2025. They use a wood-fired oven imported from Italy and a unique dough made with high hydration and low-temperature fermentation...

August 2026Margherita... The dough is beautifully puffed, with a savory, wood-fired crust on the surface. The exterior is light, while the inside has a moist, chewy texture. The acidity of the tomatoes, the milky richness of fresh Italian mozzarella, and the aroma of basil blend in perfect balance. It's not a pizza loaded with toppings, but the dough is so delicious that I was able to eat it all, right down to the crust.
